Selina Says:

I write this entry to you from the KL LCCT terminal at 2am in the morning as I wait for my 9am flight to London. In my last post I forgot to introduce to you a new member to our dumpling project. Joining us on board in June will be fresh graduate Chris Poon from the Hong Kong Academy for Performing Arts! Before we go further about how Chris got roped into this project, I would like to rewind this story a little; back into July 2010.


Alice and I were travelling around Asia for the month and found ourselves in Hong Kong. We attended the CouchSurfing zone that runs at a local pub every Thursday night. It was this fateful night that I met Chris on the steps of the pub drinking 711 bought beers at a fraction of pub prices with a few other rogue CouchSurfers. Just to clarify, it is legal to drink in public spaces and the pub owners didn't seem to mind. This was the night we fostered a new friendship with Chris. Together with a couple other CouchSurfers we drank the night away and as the pubs closed; we found ourselves outside 711 again as the streets of Hong Kong started to empty out. Looking for a new game plan we bought more booze and followed our other new friend Ahnjili up an empty posh Hong Kong mall to the rooftop. Apparently after hours, most places in Hong Kong become public space; so we settled down from a choice of rattan sofas with tables as part of a hot Hong Kong bar with all our travelling gear. We had the most amazing view of the Hong Kong harbor for free with great company; and as we waited for the sun to rise, bonded with everyone including Chris over cans of Tiger, ukulele performances and good chats.


Fast forwarding to the present, we are giving Chris free reign to set up our arts/fringe corner at 8Folds while Alice and I busy ourselves with dumplings! This all came about when Chris and I had a skype catch up about life in general and his plans upon graduating; when an idea hit me and I proposed he come join us. It has always been our intention to set up this concept restaurant with arts as an equally strong focus as our food.  Now that Chris is on board we will be able launch food and arts simultaneously. It didn't take much to convince Chris to buy a ticket to Lisboa and we are thrilled to have him join us with his expertise and experience. Chris is passionate in his field of arts and we encourage friends with ideas in line with 8Folds' vision to step forward in creating and sharing this new community with us.


As Chris nears graduation and leaves Hong Kong for Lisboa, he will share with you his thoughts and ideas for 8Folds.

  1. Selina, Can't believe you're headed for Europe already!! I'm so excited about 8folds! If this place is anything like its name,it's going to be THE spot in Lisbon! Welcome on board to Chris!
