So Bordeaux has one and only one massive Chinese grocery store; and despite having a fairly extensive supply of all things Asian including frozen dumplings, they did not sell pre-rolled dumpling wrappers! Determined to make dumplings in Bordeaux and aware that I might encounter this exact problem in Lisboa, we made our own dumpling dough. It wasn't as daunting as I thought it would be and I was pleasantly surprised with how it turned out. For anyone out there keen to give it a go; it's 2 parts plain flour to 1 part water. Knead it till it's smooth and roll out 1 inch balls of dough into circular wrappers, and fill with lovely dumpling mixture! Till the next dumpling stop--Madrid, Spain!
